Elizabeth enrolled in culinary school, then the two started showing up at farmers markets with a folding table and a whole lot of heart. Those early pop-ups gave them the courage to launch a tiny food trailer.

Albuquerque Built This Restaurant

In 2021, the Albuquerque community funded Vegos's first brick-and-mortar home on Carlisle. The restaurant has since moved to its current home on Indian School Road, but it still belongs to the neighborhood as much as it belongs to the family that cooks in it.

Vegos has been named Best Vegan Option three years running — 2022, 2023, and 2024 — and in 2025, Edible New Mexico honored Elizabeth as Best Chef in the state. None of it changed how they cook; it just confirmed what the community already knew.
